In this monograph we will enter the world of this flagship product in our gastronomy, with the tasting and exchange of impressions of the 100% Iberian acorn-fed ham of the DO Extremadura (2016) Don Ramón olivenza and the Iberian acorn-fed ham 75% Iberian breed Guijuelo (2015) Castro y González.
A practical demonstration of the technique of starting, cutting, plating and use of the ham will be carried out and information on the food and quality regulations governing this product will be provided. You can also practice cutting these products under the supervision of experts and will end with a brunch where you can taste.
The training will be presented by Pedro José Pérez Castro, a professional Master Cutter recognized worldwide, trainer in several hospitality schools and who has participated as a cutter and judge in numerous national competitions of professional ham cutting.
We will also be accompanied by Manuel Pradas Rodríguez, a professional in the charcuterie sector and manager of Artiberic, a professional ham cutter company in Barcelona, and Telesforo Sanchez Rubio, an Iberian distribution professional in Barcelona and the manager of Exclusives Telsan.
